Aubergine Curry Mouthwatering Eggplant Dish

A tasty vegetarian dish that you can enjoy with rice or any flatbread.

It's a quick-to-make vegetarian dish. A perfect choice for a busy mid-week.

Easy Ingredients

Cut your aubergine in chunks. Sprinkle some salts over then rinse. Roast the aubergine on a pan until softened and slightly charred.


Get your curry sauce ready. Fry onion, ginger-garlic paste, and spices. Add in  chopped tomatoes. Cook until you get a deliciously smooth sauce.



When you're happy with curry sauce, add in the pan-roasted aubergine to it. Cook further for about 7 minutes so the aubergine soak up the sauce flavour.

Garnish your aubergine curry with chopped coriander leaves and serve it with your favourite carb such as chapati, naan bread, pitta bread or rice.
