1 ¾ cup all-purpose flour. 10 tbsp unsalted butter. ½ tsp salt. ½ tsp baking soda. ½ cup granulated sugar. ½ cup soft brown sugar. 2 tsp vanilla extract. 1 egg. 1 egg yolk. 1 ¼ cup chocolate chips

Let the butter fully melts first, then add the white sugar. Stir and cook until sugar dissolves.
Put the brown sugar and salt into the butter mix. Cook until it looks shiny.
When the butter mix is shiny and emulsified, stir in the egg yolk and egg respectively. Whisk well after each addition.
Next, add in the baking soda, salt and vanilla extract. Mix well.
Quickly fold the flour in and make sure there is no lumps. Take care not to over mix.
Your dough will be smooth and sticky. Refrigerate for about 5-10 before baking. Or longer if you want to bake later.
Fold the chocolate chips in the dough.
Scoop the dough on to a baking tray lined with baking paper. Bake the cookies in the preheated oven at gas 4/ 180° C/ 350° F for about 10-12 minutes.
