Eggplant Curry - Easy And Yummy Vegan Dish

A tasty vegan dish that you can enjoy with rice or any flatbread.

It's comfortingly delicious. A perfect choice for a quick-to-make vegetarian dish

Simple Ingredients

Get your eggplant ready. Cut them. Sprinkle with salt. Rinse. Then pan roast until they're soft and slightly charred.



Make the curry sauce. Fry the onion, ginger-garlic paste, and other spices. Add in the canned tomatoes. Cook until you get a luscious curry gravy.


Once you're happy with the sauce, add roasted eggplant in it. Leave it to cook for another 6-10 minutes until eggplant absorbs the flavour.

Garnish the curry with chopped coriander leaves and enjoy it with your favourite carbs such as chapati, naan bread, pitta bread or rice.
