Mix the eggs with instant espresso/  instant coffee granules.

Add the caster sugar to mixture.

Add the margarine (or baking spread).

Then add the flour and baking powder to the egg mixture.

Mix everything until smooth and fluffy.

Divide the batter into each cupcake cases and bake for 20 minutes.

Leave the cupcakes to completely cool on a rack.  And make the coffee buttercream.
