Baby chicken. Cooking oil. Galangal. Lemongrass. Cloves. Cinnamon quill. Salt, or according to taste. Sugar. Coconut milk. Brown onion, chopped. Garlic. Ginger. Kashmiri red chilli powder. Kemiri (candlenuts). Turmeric powder. Ground coriander. Ground cumin.
Using a pestle and mortar, pound the chopped onions, candlenuts, ginger and garlic into a paste.
Heat some oil in a cooking pan. Place all the spices in the oil and fry until it releases aroma.
Cook until the spices look shiny and the oil slightly separates from the edges.
Once the spices release delicious aroma, add in the chicken and let it cook until the chicken becomes firm and turn opaque in colour.
Then pour the coconut milk into the chicken. Cook until chicken is tender.
