A delicious combo of a moist raspberry sponge and raspberry infused buttercream.

KEY INGREDIENTS

raspberies, frozen or fresh margarine/ baking spread caster sugar eggs self-raising flour vanilla extract butter icing sugar milk raspberry jam

Take the raspberries out of the freezer if using the frozen ones.

Place the flour, sugar, eggs, margarine, and vanilla extract in a mixing bowl.

Mix the ingredients.

Mix everything until light and fluffy.

Fold the raspberries in the batter.

Divide the batter into each cupcake cases and bake for 20 minutes.

Leave the cupcakes to completely cool on a rack.  And make the raspberry buttercream.

Mix the butter and icing sugar until light and fluffy. Then add the sieved raspberry jam in.

Frost your cupcakes with the raspberry buttercream. And top them with  fresh raspberries.
