Soak dried chillies in hot water. Peel the onion and garlic. Chop the tomatoes. And put them all in a blender along with water.

Blitz all the ingredients in the blender until you get a smooth chilli smoothie.

Place the chilli mixture in a cooking pan. Add salam leaves, sugar, salt, oil, lemongrass and galangal. Start cooking at medium heat.

Keep cooking until the liquid reduces and the oil slightly separates from the edges. You may want to keep stirring every now and then.
