Place the mutton bones in your stockpot.
Add the onion in.
Add in the ginger and garlic.
Start boiling at medium high heat. Once the water is boiling, turn the heat to the lowest. Skim off the impurities that float on the surface.
Simmer the soup for at least 2 hours. Until the water is really cloudy and the soup tastes richly savoury.
