This creamy Cajun salmon gnocchi is made in one pan with flaked salmon, fresh gnocchi, sun-dried tomatoes, and a spiced cream cheese sauce. A quick, satisfying dinner ready in just 30 minutes.
Rub the salmon fillet with two teaspoons of Cajun spice.
Heat 1 tablespoon of olive oil in a skillet/ pan and fry the salmon for about 2-3 minutes on each side until cooked through. Let the fish fillets cool, then break them into flakes. Set aside.
Using the same frying pan, heat the remaining one tablespoon of olive oil and fry the chopped onion until softened.
Add in one teaspoon of ginger paste, one teaspoon of garlic paste, and one teaspoon of dried chili pepper flakes. Stir-fry until the spices are fragrant; it takes approximately one minute.
Pour one cup of milk over the spices.
Stir in the canned chopped tomatoes. Continue cooking for about 2-3 minutes, until the tomatoes have softened. Using a wooden spoon, mash the tomatoes as much as possible.
Add two tablespoons of cream cheese and mix well until you have a smooth, creamy sauce.
Add the fish flakes into the sauce. Carefully stir well.
Stir the gnocchi into the sauce and gently mix everything.
Roughly chop the sundried tomatoes and basil leaves. Then scatter over the gnocchi before serving.
Notes
I often make my own ginger paste and garlic paste. You can do the same, or use the store-bought ginger and garlic paste.
If you don’t have canned chopped tomatoes, you can use fresh tomatoes. But it will take longer for the tomatoes to soften. For this recipe, two medium-sized tomatoes are sufficient.
