And if youโre like me who always love chocolate chip cookies, these white chocolate cookies with dried cranberries in them make me feel less guilty in having them. Because cranberries are supposed to be good for our health, arenโt they? Just like it says in this article by Medical News Today.
So, when I half the content of the chocolate chips with those dried berries, I feel that I do myself a favour. And often I exclude the white chocolate chips when I really want to make the cookies even healthier.
How Do You Like Your Cookies?
Some people love the scrumptious and crumbly cookies (I do). But some others prefer soft and chewy cookies (like my elder son).
So if you are in a similar situation like me where your family members have these different preferences, you can always make them all happy by doing the following tips.
To achieve the crumbly cookies, you need to bake the dough until lightly golden and fully cooked. As guidance, it takes approximately 20-25 minutes to bake the cookies in this recipe. Another thing you want to do is you would want to omit the raising agent from the dough.
Because baking soda is a leavening agent that releases carbon dioxide gas in the cookies and makes them soft and fluffy. And when you slightly undercook the cookies, the gas is kindly trapped and creates softness and chewiness.
Therefore, if you want soft and chewy cookies, you would want to add the raising agent and cut down the baking time to 12-15 minutes. The cookies will be firm to touch on the outside but you can feel the softness on the inside.
The Straightforward Ingredients
You donโt need fancy ingredients for these fancy cookies. All items are pretty much regular residents in our pantry, except the dried cranberries and white chocolate chips. Unless of course, your pantry keeps more stuff than mine does ;-).
In total, you only need 8 items for this recipe. They are salted butter, plain flour/ all-purpose flour, caster sugar, egg yolk, orange juice, bicarbonate of soda/ baking soda, dried cranberries and white chocolate chips.
How To Make White Chocolate Chip And Cranberries Cookies
In this recipe, I use the creaming method. I find this helps to achieve the smooth dough without the grittiness of caster sugar.
So, you cream the butter and sugar until the sugar almost fully dissolves. Then you add in the egg yolk and orange juice.
After that, you sieve in the flour and the baking soda into the butter. Fold the mixture until all combined and smooth.
Then you can add the cranberries and the white chocolate chips respectively as you keep folding and mixing.
When it comes to shaping the dough, I use a tablespoon to measure so I can get a reasonably uniform size. Roll the dough slightly into a ball shape and lightly flatten with the back of a spoon until you get a ยฝ inch thick cookie dough.
Bake the cookies in a preheated oven at gas 4/ 180ยฐ C/ 350ยฐ F for about 12-15 minutes for soft and chewy cookies, or approximately 20-25 minutes for crumbly cookies.
Bake And Gift Them
Just like any cookie, you can always bake these delicious white chocolate chips and cranberry cookies for gifting your family and friends.
All you need is a nice glass jar and a ribbon.

Ingredients
- 7.05 ounces salted butter softened.
- 1 ยพ cups plain flour/ all-purpose flour.
- 3.53 ounces caster sugar.
- 1 egg yolk lightly beaten.
- 2 teaspoons orange juice.
- ยฝ teaspoon bicarbonate of soda/ baking soda optional (see the note).
- ยพ cup dried cranberries.
- ยฝ cup white chocolate chips.
Instructions
- Using a handheld mixer, cream the butter until light and fluffy.
- Add the sugar into the butter little by little as you keep whisking until the sugar dissolves.
- Pour the egg yolk into the butter mixture followed with the orange juice, and continue whisking until you have a smooth mixture.ย
- Sieve the flour and bicarbonate of soda/ baking soda (if using) into the butter mixture. Using a spatula gently fold the mixture until all is combined.
- Add the white chocolate chips and the dried cranberries respectively. Mix well after each addition.ย
- Preheat the oven at gas 4/ 180ยฐ C/ 350ยฐ F.
- Prepare your baking tray and line with greaseproof paper/ parchment paper.
- Spoon the dough and shape it into a small ball. Place the cookie dough balls on a lined baking tray and space them well apart. Work through until all the dough is finished. Press the dough balls lightly with the back of a spoon until the dough is around ยฝ inch in thickness.
- Bake at gas 4/ 180ยฐ C/ 350ยฐ F for 12-15 minutes if you want chewy cookies and about 20-25 minutes if you want scrumptiously crumbly cookies.
Notes
- You can omit the bicarbonate of soda/ baking soda if you prefer your cookies to feel crumbly and a little crispy. To achieve this you bake them for about 20-25 minutes until the cookies are fully cooked and look slightly golden.
- If you want soft and chewy cookies, you can add the baking soda and cut down the baking time to 12-15 minutes. The cookies will be firm to touch but soft on the inside.
